Roasted Garlic Hummus


A popular classic, perfect for every party or occasion.

Ingredients

1⁄4 cup garlic cloves, peeled

1 cup extra virgin olive oil

4 cups Jack’s Quality Garbanzo Beans

1⁄4 cup tahini paste

2 teaspoons lemon zest

2 tablespoons lemon juice

1 teaspoon paprika

1 teaspoon curry powder

1 teasponn cumin

1tablespoon salt

2 tablespoons parsley, chopped

Directions

In a sauté pan, add garlic cloves and olive oil and slowly begin to sauté garlic until cloves are golden brown and softened.

Separate 1/4 cup of garlic-olive oil for later use.

In a VitaMix blender, add garlic, olive oil, 3 cups of chickpeas retaining 1 cup for later use, tahini paste, lemon zest, lemon juice, paprika, curry powder, ground cumin and salt. Puree until smooth.

Transfer to a serving bowl and garnish with chopped parsley, remaining 1/4 cup olive oil and remaining chickpeas.


Note: Garnish with crumbled feta cheese, black olives, and diced tomatoes.
